Give Thanks – And Pass The Pie!

This week Tastefully Speaking is short and sweet. The topic focuses on my favorite time of the Thanksgiving feast. What time is that? It starts with three words, “pass the pie.”

Today's recipes are old standbys from the labels of products our grandmothers once used to prepare the traditional Thanksgiving feast. In case you've misplaced those labels, (or they've become too splattered with batter to read) here they are again: Karo's Pecan Pie, Libby's Pumpkin Pie, Pet's Sweet Potato Pie, Hershey's Chess Pie, None Such Mincemeat Pie.

KARO'S PECAN PIE

3 eggs, slightly beaten, 1 c. Karo light corn syrup, 1 c. sugar, 2 T. butter, melted, 1 tsp. vanilla, 1-1/2 c. pecan halves, 1 unbaked 9″ pie shell

In large bowl stir together the first five ingredients until well blended. Stir in pecan halves. Pour into pastry shell. Bake in 350-degree oven for 50 to 55 minutes or until knife inserted halfway between center and edge of pie comes out clean. Cool. Serves eight.

LIBBY'S PUMPKIN PIE

3/4 c. sugar, 15-oz. can Libby's pumpkin, 1/2 tsp. salt, 12-oz. can evaporated milk, 1 tsp. ginger, 1/2 tsp. cloves, 2 lg. eggs, 1 unbaked 9-in. pie shell

Mix sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar spice mixture. Gradually stir in evaporated milk Pour into pie shell. Bake in preheated 425-degree oven for 15 minutes. Reduce oven to 350 degrees and bake 40 to 50 minutes more or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serves 8.

PET'S SWEET POTATO PIE

3 to 4 lg. sweet potatoes, 1/2 tsp. nutmeg, 1/2 c. butter, softened, 1/4 tsp. cloves, 2 c. sugar, 13-oz. can evaporated milk, 4 eggs, 2 (9-in.) unbaked pie shells, 1 tsp. cinnamon, 1/2 tsp. salt

Preheat oven and cookie sheets to 375 degrees. Boil sweet potatoes in water until easily pierced by fork. Cool slightly. Place cooked and peeled potatoes in large mixing bowl. Beat with electric mixer until smooth. Stir in butter and sugar. Beat in eggs, one at a time. Mix in spices, salt and Pet milk. Pour into unbaked pie crusts. Bake on preheated cookie sheet near center of oven for 70 minutes or until knife inserted in center comes out clean. Cool on wire rack. Makes two pies.

HERSHEY'S CHESS PIE

3 eggs, 2 c. sugar, 3/4 stick butter (6 T.), 3/4 c. milk, 1-1/2 T. flour, 6 T. cocoa, pinch of salt , 2 tsp. vanilla, 2 unbaked pie shells

Cream butter and sugar. Add eggs, then remaining ingredients and blend thoroughly. Pour mixture into two unbaked pie shells. Bake in 350 degree oven for about 45 minutes. Makes two pies.

NONE SUCH MINCEMEAT PIE

9-oz. pkg. None Such mincemeat, 1 to 3 T. sugar, pastry for 2 crust pie, 1-1/2 c. water

Break mincemeat into pieces in medium size saucepan. Add water and sugar. Stir over medium heat until lumps are broken. Boil one minute; stir occasionally. Cool. Line pie plate with pastry; fill with mincemeat mixture. Moisten edge of crust with water. Cover with upper crust; trim and press edges together. Cut several gashed in center of upper crust. Brush top crust with milk. Bake in hot (425-degree) oven 30 minutes or until golden brown. Makes one 8-inch pie.

Note: for 9-inch pie use two 9-oz. packages of mincemeat.
